Stir Fried Leeks Recipe (with Roast Pork)

Roasted a huge slab of pork belly earlier (click here for my Crispy Roast Pork Recipe) as I wanted to use the extras to create a few other dishes. In the end, there weren’t a lot of leftovers to make use of because the roast pork itself was so addictive, we couldn’t stop eating it, lol.

Stir Fried Leeks Recipe (with Roast Pork)

This is one of my favourite dishes to cook for Chinese New Year because that’s really the time to eat more leeks. 吃蒜有钱算!The older folks used to say that in Teochew. The leek is supposed to be a lucky vegetable so the more you eat, the more money you will have to count in the new year. ?

Personally I do enjoy this dish too because I think roast pork really makes everything else delicious too. You can see from my recipe below that I’ve not used any extra oil because by browning the roast pork in the pan, you can easily draw out the lard oil from the layers of pork fat. And that pork fat will impart a wonderful flavour to the rest of the ingredients.

  • 6 stalks leeks, sliced diagonally & separated into stalks & leaves
  • 200g roast pork, sliced
  • 100g lean pork, sliced
  • 1 firm beancurd (tau kwa), cut into cubes & pan-fried/oven-baked till golden brown
  • 60g fried beancurd puffs, cut into cubes
  • 1 carrot, sliced
  • 2 cloves garlic, minced
Seasonings:
  • 1 tbsp oyster sauce
  • 1 tsp light soy sauce
  • 3 tbsp water
Brown the roast pork in a frying pan without adding oil. Remove and drain on paper towels to remove excess grease.
If there is too much lard oil in the pan, remove some with paper towels.
Stir fry the lean pork slices till meat is no longer pink.
Add garlic, leek stalks and carrots. Briefly stir fry till the leek stalks and carrots are slightly tender.
Add firm beancurd, beancurd puffs, leek leaves, roast pork and seasonings. Stir fry till well combined.
