Avocado Pasta with Crispy Salmon Recipe

I love no-cook pasta sauces because they are just so easy to make. All I need is just my handy food processor to blend everything together. Avocado is a perfect ingredient to make such a pasta sauce because of its slightly eggy flavour, rich and creamy texture that really gives dimensions to any pasta type. This is very much a heart-friendly recipe that you can serve with any greens or meat of your choice. Enjoy!

Avocado Pasta with Crispy Salmon Recipe

Ingredients (serves 2-3)
250 penne pasta, boiled till al dente
1 salmon fillet
2 ripe avocados, scoop out flesh & discard the seeds
2 cloves garlic
2 tbsp skimmed milk
2 wedges Laughing Cow reduced fat cream cheese
2 sprigs parsley
juice of 1/2 lemon
salt & freshly cracked black pepper
salad greens

Instructions
1. Heat a little olive oil in pan and briefly pan-fry the salmon fillet till both sides are cooked through. Using the spatula, break apart the salmon fillet into smaller bits and continue pan-frying till the salmon becomes crispy and crunchy. Remove and drain on paper towels to remove excess oil.
2. In a food processor, blend together the avocados, garlic, skimmed milk, cream cheese and lemon juice till you get a paste. Add the parsley and pulse briefly. Season with salt and pepper.
3. Transfer the avocado sauce into a large bowl and toss in the pasta till thoroughly mixed.
4. Serve with salad greens and top with the crispy salmon.

This recipe is perfect with spaghetti too or any pasta of your choice 🙂
