Braised Chicken and Macaroni in Tomato Sauce

This is a quick-fix pasta meal that is perfect for a weekday dinner. It mainly uses ingredients and seasonings that you probably already have in your fridge and/or pantry. I served the braised chicken with macaroni but you can use any pasta of your choice or with crusty bread if you like.

Braised Chicken and Macaroni in Tomato Sauce

Ingredients (serves 3)
200g macaroni, cooked according to packet instructions
300g chicken breast or boneless leg/thigh, cut into small cubes
5 sticks celery, cut into small pieces
1 carrot, sliced
5 slices ginger
5 cloves garlic, peeled & chopped
1 tbsp sunflower oil
pinch of salt

For the sauce:
500ml water
1 tbsp tomato ketchup
1 tbsp sweet chill sauce
1/2 tsp sugar
pinch of salt

Instructions
1. Marinate chicken pieces with a pinch of salt. Set aside for half hour.
2. Heat oil in pan and lightly brown the chicken. Add ginger and garlic and stir fry till fragrant.
3. Add in celery and carrot. Stir fry for a minute.
4. Add all ingredients for the sauce and bring to a boil. Reduce heat to simmer for 10-12 minutes till vegetables are tender.
5. Serve the braised chicken and vegetables over the macaroni.
