Chicken Arroz Caldo Recipe (Filipino Style Chicken Congee)

I just had a sudden thought of my last business trip to the Philippines and recalled that the food I had there were very similar to our Chinese food so I started searching for Filipino recipes and came across this congee one which looked really scrumptious. Hot congee is always so tummy warming on a rainy day! I’m pleasantly surprised by the difference garlic powder really made. The chicken was tasty and the entire congee was rather robust in flavour.

Chicken Arroz Caldo Recipe

Ingredients (serves 2)
1/2 chicken about 500g, remove skin, trim fats & chop into pieces (or use your preferred chicken parts)
1/2 tbsp garlic powder
1/4 teaspoon freshly cracked black pepper
pinch of salt
5 slices peeled ginger
1 red onion, diced
1 tbsp fish sauce
1 tsp chicken seasoning powder
3/4 cup long grain white rice, rinsed & drained
5 cups water
2 hard boiled eggs, halved
chopped spring onions as garnish

Instructions
1. Marinate chicken with garlic powder, pepper and salt. Chill in fridge for at least half hour before cooking.
2. Heat a little oil in pan and saute the ginger and onion. Add chicken and stir fry till meat is no longer pink.
3. Add rice and stir fry with the chicken for about 30 seconds. Add water and chicken seasoning powder and bring to a boil. Reduce heat and simmer for half an hour till porridge reaches your desired consistency. Season with fish sauce.
4. Serve with hard boiled eggs and garnish with spring onions.
