Fried Okra Recipe (Crispy Lady’s Fingers)

It’s Movie Night Friday! And of course I have to make some nibbles as usual for our long movie marathon through the night. Looking forward to enjoying these crispy, crunchy fried okra as we catch a couple of psychological thrillers and possibly horror ones too on Netflix. Ooh, can’t wait!

These fried okra kinda remind me of tater tots. Though they aren’t any healthier as they are also deep-fried, at least they are not frozen, processed food with excessive salt. πŸ˜€

Right, I’m just trying to convince myself that it’s OK to eat fried food though I’m supposed to be watching my diet as always, haha.

If you have kids who aren’t fond of okra, this will be a pretty good recipe to make. It’s all about that crunch minus the slime, which is what many of us hate okra for. The little ones probably won’t even know they’re actually eating okra. Yucks may just become yum. πŸ˜‰

As I had some king oyster mushrooms left in the fridge, I sliced them up and fried them in the same way. Turned out just as yummy!

You can also experiment with other mushrooms or vegetables like green beans, eggplant, zucchini, etc. So dig into your fridge and see what else you can find. It’s a good way to maximise usage of the frying oil as I never like to recycle it. πŸ˜€

Fried Okra Recipe

  • 1/2 cup plain flour
  • 1/2 cup water
  • 1 egg
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • freshly cracked black pepper
  • 250g okra, cut into 1″ sections
  • 1/2 cup panko breadcrumbs
  • sunflower oil for frying
Whisk all ingredients (except okra, panko and oil) in a large bowl till just combined.
Dip the okra into the batter and lightly coat with the panko breadcrumbs.
Deep fry in hot oil till golden brown and crispy. Drain on kitchen towels to remove excess oil.
Serve immediately with chilli sauce and/or mayonnaise.
