Lotus Root & Peanuts Pork Ribs Soup Recipe

If you’ve read my earlier post on my favourite lotus root soup from Shen Xi Soup (click here), you’d know how much I really love this soup. I try to cook it at home at least once every 2 weeks and it’s probably healthier than those from outside because I don’t add MSG or too much salt in my soup.

What draws me to lotus root soup is that the respective flavours of the lotus root slices, carrot chunks, peanuts, dried cuttlefish and pork ribs are all imparted to the soup, making it very sweet. If you like, you can also add extra chicken bones and/or carcasses to enhance the flavour.

Sipping hot soup warms up my heart and soul and definitely makes me smile every time =)

And there you are. A bowl of wholesome goodness, served with steamed red/brown rice and a side dish of omelette. Absolutely healthy, totally yummy. If you need an extra kick to the supposedly ‘plain’ meal, just serve with some sliced red chilli and light (or dark) soy sauce (for dipping).

Lotus Root & Peanuts Pork Ribs Soup Recipe

Ingredients (serves 3-4)
400g pork ribs, blanched
chicken bones & carcasses (optional)
1 lotus root, peeled & sliced
2 unpeeled carrots, cut into chunks
100g raw peanuts, soaked in water for at least 3 hours
1 piece dried cuttlefish, cut into small strips
water
salt to taste

Instructions
1. Place all ingredients in soup pot and fill with enough water to cover the ingredients.
2. Bring to boil. Reduce heat and simmer for at least 1.5 hours.
3. Season with a little salt before serving.
