Mango Prawns Salad Recipe

I made this simple Mango Prawns Salad with inspiration from my other recipe, Cajun Spiced Salmon with Mango Salsa that was featured in Singapore’s Shape Magazine months ago. I loved the flavour of the Cajun spice mix that was further accentuated by the sweetness of the mango. The tartness & acidity from the lemon or lime juice just balanced everything up and lifted the flavour with a citrus boost. Normally when it comes to making salads, I try to use everything natural if possible so we can enjoy the original flavours of the produce used. It’s a healthy and easy recipe that you can make in advance for a packed work lunch. Enjoy!

Mango Prawns Salad Recipe

Mango Prawns Salad Recipe

Ingredients (serves 1-2)
6-8 prawns, remove shells & keep tails intact
1 mango, cut into cubes
1 cucumber, julienned (discard seeds)
juice from 1 green lemon or lime
olive oil

Spice mix:
1/4 tsp chilli powder
1/2 tsp ground cumin
1/2 tsp paprika
1/2 tsp coriander
1/2 tsp soft brown sugar

Instructions
1. Marinate the prawns with the spice mix and chill in fridge for half an hour till ready to use.
2. In a pan, heat a small amount of olive oil and pan-fry the prawns till they turn opaque. Remove and set aside.
3. To assemble the salad, place the cucumber on a plate and scoop the mango cubes over. Arrange the prawns on top and squeeze over the lemon or lime.
