Meatballs with Gravy Recipe

My husband and I used to go to Ikea once in a while for their meatballs. However, the standard and quality of these little morsels have deteriorated over the years. Now, I find them too floury for my liking. And we can’t taste the meat in them anymore which is a shame because their brown sauce and lingonberry jam are still great condiments.

That certainly sparks off an idea to create fresh and juicy meatballs at home. And let me tell you, it’s not difficult at all.

Meatballs with Gravy Recipe

Ingredients
250g minced beef
250g minced pork
1 large onion, diced
1 egg
1/4 cup low fat milk
1/2 cup panko breadcrumbs
1 heaped tbsp unsalted butter
1 tsp garlic powder
salt & pepper

Instructions
1. Preheat oven to 175 deg C.
2. Melt butter in pan and saute the onions till soft.
3. Combine onions and the rest of the ingredients in a large bowl and season with salt and pepper.
4. Line a baking tray with aluminium foil (for easy cleaning afterwards). With wet hands, roll the meatball mixture into round balls of your desired size and arrange them on the tray with at least half inch of space in between the balls.
5. Bake for 25-30 minutes till the meatballs turn a nice golden brown.

For the Gravy

Ingredients
3 tbsps unsalted butter
3.5 tbsps plain flour
1 piece beef cube
2.5 cups chicken stock (fresh or store-bought – I used leftover chicken soup from previous day)

Instructions
1. Dilute the beef cube in the chicken stock.
2. Melt the butter in a pan over low heat. Add the flour and stir continuously for about 6-8 minutes until mixture turns a medium brown. Be careful not to let the mixture burn.
3. Add the stock and continue stirring. Bring the mixture to a boil over medium heat then reduce heat and simmer for a few minutes until the mixture thickens. Do not stop stirring while simmering.

Serve the meatballs with the gravy and some boiled potatoes and broccoli if desired.

These home made meatballs are so much better than outside ones because they are so meaty with every bite. Instead of pan-frying them in butter, I prefer to bake them instead which is definitely a healthier way of cooking. The gravy is also good for other types of food like mashed potato, fried chicken, etc. It’s a versatile sauce that is tasty and easy to make.
