This Curry Pork Ribs Recipe is a simplified way of cooking ribs if you don’t have the time to slow bake them. While the texture of the meat is chewier, it is made very flavoursome with the use of aromatic curry powder. Just a different way to enjoy pork ribs. Give it a try!

Pan-Fried Curry Pork Ribs Recipe

Ingredients (serves 2-3 as one of few side dishes)
500g pork prime ribs (about 8 pieces)
1 red onion, peeled & cut into quarters
4 cloves garlic, peeled
2 tbsp chicken curry powder
1/2 tsp salt
1/2 tsp light soy sauce
1 tbsp Chinese cooking wine
1 tbsp brown sugar
2 tbsp sunflower oil

Instructions
1. Combine the red onion and garlic in a food blender or chopper and process till fine.
2. Marinate the ribs with the onion-garlic mixture, curry powder, salt, light soy sauce, wine and sugar. Leave in the fridge to chill for at least 4 hours or overnight for best results.
3. Heat oil in pan and pan-fry the ribs for 15-20 minutes or till golden brown on all sides.
