Proofer Boulangerie @ The Seletar Mall

Previously, I had tried the pizzas from Proofer Bakery & Pizzeria @ Changi City Point and really liked their pizza dough that was crusty & crispy on the outside yet soft & moist on the inside. So when I came across its bakery at Seletar Mall, I thought I would grab a couple of breads home to try out.

I was here on a weekday evening and the shelves were still brimming with fresh bakes.

Most of the breads looked so enticing (I always can’t resist breads!) and I had a hard time shortlisting what I wanted as usual. And when I finally tried my haul of breads, I was dealt with waves of disappointment, bread after bread, that I decided these were not even worth my calories, needless to say, money. The pizzeria and bakery were simply poles apart.

Walnut Cheese Bread

This was probably the best among the worst. It was supposed to contain walnuts, cubes of cheese & mozzarella. While I did find a miserable amount of walnut bits, I could hardly detect the sight, taste or smell of any cheese. The bread was soft and only slightly more moist compared to the others.

Choco Lover Bread

This was one that I was looking forward to because its name seemed to suggest this was going to a real chocolatey treat for any chocolate lover. Except for those brown bits on the outside that weren’t really that choco-tasting, there was absolutely no filling within.

Oreo Gauche

Just look at the ratio of bread to chocolate ganache. It didn’t help that the chocolate ganache was quite awful and the bread was so dry. I only liked the oreo bits on top that wouldn’t go wrong.

Mou San Wang Durian

Again, another bread with miserable amount of filling that I had kind of given up taking pictures of the cross sections. The durian flavour was so weak and it tasted quite artificial too.

Triple Cheese Bagel

While I didn’t mind the tough texture of the bagel, I didn’t appreciate that there were hardly any cheese in it. Triple Cheese? So misleading.

Nacho Potato

After sharing the entire bun with the husband, we didn’t even find any trace of cheese sauce inside the potato mash filling.

French Custard Conet

The only bread with a ‘generous’ amount of filling that unfortunately failed to impress because the custard was like those made from powder and tasted too artificial for my liking.

I was really looking forward to trying the breads from Proofer because their pizzas had set a pretty high benchmark for me and I expected them to do equally well in their breads too but I was wrong. My overall impression of Proofer Boulangerie had simply dipped to ground zero. The bread itself was all dry and unpalatable. The amount of filling or ingredients was just pathetic. Prices weren’t cheap and definitely not value for money for such mediocre quality. What a waste of calories too. Seems like my favourite Duke Bakery and Johan Paris are still unbeatable.

    Proofer management should look into it’s products made by their bakers, sometimes it taste very good, sometimes taste like stale bread, especially the French loaf. The outlet at Compass One wasn’t very friendly with a smile, most of the female staffs looked like mourners from the wake, everyday the same face no smiley face, talk to them just quiet not much respond
