Roasted Chicken with Sweet Onion Sauce Recipe

Yellow onions have a lovely natural sweetness in them which will be further enhanced when they are cooked longer. And that’s probably why caramelised onions always taste so good.

I wanted to make a caramelised onion sauce initially but that would have taken me at least 45 minutes to whip up. I needed something quick for lunch before heading out for my appointment and since I had just a bit of yogurt to use up in the fridge, I thought I would make this sweet onion sauce instead which didn’t take me too long. Don’t be mistaken by the name ‘sweet onion sauce’, there’s actually no addition of sugar or any sweetening agent – it’s merely the natural sweetness of onions. ๐Ÿ˜‰ Nothing complicated, just a simple home cooking idea.

Roasted Chicken with Sweet Onion Sauce Recipe

Ingredients (serves 2)
2 boneless chicken legs
sea salt & freshly ground black pepper
2 tsp olive oil
1 large yellow onion, peeled & diced
1 tbsp butter
300ml fresh chicken broth
2 tbsp non-fat plain yogurt
steamed potatoes and boiled peas as side dishes

Instructions
1. Preheat oven to 200 deg C with fan. Line a baking tray with aluminium foil.
2. Toss the chicken legs with olive oil and season with salt and pepper on both sides.
3. Transfer the chicken onto the baking tray and roast in the oven for 20 minutes till skin is golden brown and crispy. Reserve pan juices for later.
4. Melt butter in pan and fry the onions till tender.
5. Add the chicken broth and pan juices and bring to a boil.
6. Reduce heat to simmer for 15 minutes.
7. Turn off heat and stir in the yogurt. Season with salt and pepper to taste.
8. Pour the onion gravy over the chicken and serve with your preferred sides.
