Sardines in Tomato Sauce with Onions Recipe

Inspired by what Gran used to do with a can of sardines when I was little. For convenience sake, it is all too easy to just heat up a can of sardines and eat it as it is but with just a little bit more work to dress it up with more fresh ingredients, canned food really doesn’t have to be flat, boring and unappetising. To be honest, I’m not a big fan of sardines (prefers canned tuna) because the tomato based sauce makes me feel sickly very quickly. But this recipe has the complete opposite effect on me. The onion slices gave the texture some crunch, the lemon juice gave a hint of tang that really lifted the dish and the coriander added fragrance and aroma too. I totally enjoyed it with steamed rice and I hope you will too.

Sardines in Tomato Sauce with Onions Recipe

Ingredients (serves 2-3)
1 can sardines 425g
1 large red onion, sliced
2 tomatoes, wedged
2 red chillies, deseeded & sliced
juice from 1 green lemon or lime
1 tsp fish sauce
pinch of salt
200ml water
3 tbsp ketchup
2 tbsp sweet chilli sauce
coriander leaves, chopped
olive oil

Instructions
1. Heat a little oil in pan and sauté onions.
2. Add sardines, tomato wedges and water. Bring to a boil then reduce to low-medium heat.
3. Add ketchup, sweet chilli sauce, fish sauce and season with a little salt.
4. Add in chillies, coriander leaves & lemon juice. Stir to combine.
