Smoked Salmon with Potato Rosti Recipe

If you’ve been to Marché in Singapore, you’d probably have tried their popular rosti, served either plain or with smoked salmon or a sausage of your choice. I’m a big fan of potato rosti and I could never forget the best one I had in Switzerland that came in a frying pan with a really juicy jumbo veal sausage and was crispy on the outside and tender on the inside.

Smoked Salmon with Potato Rosti Recipe

Ingredients (serves 2)
3 russet potatoes approx. 600g, grated
1 large egg, lightly beaten
2 tbsp plain flour
2 tbsp unsalted butter
salt and freshly cracked black pepper
sour cream
100g smoked salmon

Instructions
1. Place the grated potato on a clean dish towel and squeeze all liquid out as much as possible.
2. Transfer to a mixing bowl and add egg and flour. Season with salt and pepper and stir to combine.
3. Heat some vegetable oil in a skillet and melt the butter in it. Add a heaped tablespoonful of the potato mixture and press down gently with a spatula to form a small patty. Repeat with the rest of the potato. Pan-fry the patties on both sides till golden brown and crispy.
4. Top each patty with a dollop of sour cream and smoked salmon.

Grated potatoes oxidise easily when exposed to air so they will turn dark in colour but don’t worry because it will not affect the dish and it is completely safe to eat. Are you making some rosti today? Enjoy!
