Today’s recipe is a simple chicken and leeks stir-fry with a balance of savoury and spicy flavours. Nothing too complicated – it’s classic Chinese cooking that’s quick to prep, easy to make. You can serve this as a one-dish meal with steamed rice.

Spicy Chicken with Leeks Recipe

Ingredients (serves 2-3)
300g boneless chicken leg, remove skin and cut into bite-sized pieces
5 red chillies, sliced
3 stalks leek, sliced diagonally
1/2 bulb garlic, minced
1 heaped tbsp fermented black beans, rinsed & gently bruised
1 tbsp sesame oil
dash of white pepper
vegetable oil

Marinade:
1 1/2 tbsp light soy sauce
1/2 tbsp sesame oil
1/2 tsp sugar
1 tbsp chinese cooking wine
dash of white pepper

Instructions
1. Marinate the chicken meat and chill in fridge for at least half hour before cooking.
2. Heat a little oil in pan and pan-fry the chicken till cooked through. Remove and set aside.
3. In the same pan, saute the garlic and fermented black beans till fragrant. Add chillies and leeks and stir fry briefly.
4. Return the chicken to the pan. Add a dash of pepper and drizzle sesame oil over. Stir fry till well combined.
