I have such a food fetish for anything Korean these days that I actually tried whipping up 5 consecutive days of Korean dishes for lunch just by using gochujang (Korean chilli paste), chicken or pork, vegetables, kimchi and rice or vermicelli. And I’m just amazed at how versatile this gochujang is. I guess I just like it in whatever form. This Spicy Stir Fried Kimchi Pork Recipe is one of my favourites to share.

Spicy Stir Fried Kimchi Pork Recipe

Ingredients (serves 1-2)
150g pork belly, top layer skin & fats removed & thinly sliced
100g kimchi, sliced to bite-size
1 yellow onion, sliced
1 carrot, peeled & julienned
1 tbsp gochujang (Korean chilli paste)
1 tsp light soy sauce
1 tsp minced garlic
dash of sesame oil

Instructions
1. Marinate pork with gochujang and light soy sauce. Chill in fridge for at least an hour before cooking.
2. Heat a little oil in pan and fry pork slices till cooked through. Remove and set aside.
3. In the same pan, saute garlic till fragrant. Add onions, carrots and stir fry for 1-2 minutes till carrots are slightly soft.
4. Add kimchi and a dash of sesame oil. Return pork to pan and stir fry to combine.

Spicy Stir Fried Kimchi Pork Recipe : Gochujang This is the brand of gochujang I use which can be bought from NTUC Fairprice. It may be a big tub but it’s a handy condiment to have as it’s good for stir-fries and my favourite bibimbap (Korean mixed rice) that I will blog about very soon.

This recipe goes well with steamed rice so have some rice ready, it’d be an easy, delicious meal to make. I just adore the appetite-whetting, crunchy-textured kimchi. Together with the gochujang-flavoured pork, they just make the dish so flavoursome. Enjoy!
