Spring Onion Pancake Recipe (with my home-grown spring onions)

Watching my tomato and chilli seeds sprouting and growing up everyday for the last few months has been quite phenomenal because it just feels like I’m bringing up little kids, haha. Due to the inadequate conditions of my make-do ‘concrete gardening plot’ at the lift lobby outside my apartment, my tomato and chilli seem to be taking longer than expected to mature. So I decided to plant something that’s really easy to grow…

So now I can get a regular supply of spring onions which I use a lot in my cooking. Even though spring onions are super cheap to buy from the supermarket, there’s nothing more satisfying than growing and harvesting my own.

With my last batch of harvest which was quite a big bunch, I decided to make spring onion pancakes for afternoon tea.

Spring Onion Pancake Recipe

Ingredients (makes 4 pancakes)

250g plain flour
1 tsp sugar
1/4 tsp sea salt + extra as seasoning
160ml water
a bunch of spring onions (approx. 150g) , finely chopped
1 1/2 tbsp olive oil + extra for pan-frying

Instructions

1. Combine the flour, sugar and salt in a mixing bowl. Gradually add water and stir till a sticky dough forms.
2. Scrape the dough onto a lightly floured surface and gently knead into a ball. Cut the dough into 4 equal parts.

3. Using a rolling pin, roll out each portion of dough as thinly as possible.

4. Lightly brush the surface with olive oil and sprinkle over a tiny pinch of salt. Arrange the chopped spring onions on top.

5.ย Starting from the bottom end, roll the dough up into a strip.

6. And curl the strip up into a spiral shape.

7. Press down the spiral and roll out the dough flat into a circular shape.

8. Heat some oil in pan and pan-fry the pancake till golden brown and crispy on both sides.

Use a pizza cutter to slice up the pancake and serve with sweet chilli sauce if you like ๐Ÿ™‚ Come, let’s dig in!

By the way, do not throw away the shallot bulbs if you’re growing your own spring onions. They can be replanted back into the pot like what I did.

Give it another 3-4 weeks, you will get another batch of spring onions for more pancake-making, lol ๐Ÿ˜‰
