Steamed Minced Chicken with Salted Fish Recipe

Inspired by my mother-in-law’s salted steamed minced pork, I thought I would do a leaner one with chicken and instead of using just salt, I added salted fish for a more robust flavour. In order to draw out the fragrance of salted fish, after I have soaked it in water and cut it into small bits, I lightly tossed them in just a touch of oil in a frying pan so the exterior would be a little golden brown and crispy before I mixed them in with the minced chicken. This dish is light and really easy to make, perfect for those days when you just want to whip up some simple dishes to go with rice congee. Enjoy.

Steamed Minced Chicken with Salted Fish Recipe

Ingredients (serves 1-2)
150g minced chicken
10g salted fish, cut into small pieces
1 tsp ginger juice
1 tsp light soy sauce
1 tsp corn starch
dash of white pepper
julienned carrot as garnish

Instructions
1. Combine all ingredients in a mixing bowl and then transfer onto a steaming dish.
2. Using a spoon, press the meat mixture into a patty shape and steam at high heat for 15 minutes.
3. Garnish with carrot and serve.
