Stewed Pork Chops with Bitter Gourd Recipe

I really couldn’t recall where and when I had a similar dish like this before. Perhaps at some Teochew porridge stall or maybe Gramp had made it when I was little as he was so fond of the canned stewed pork chops then. All I remembered was that the dish was really savoury and tasty and that the sauce went really well with porridge or rice. I have a love-hate relationship with bitter gourd; I can eat it so long a stronger tasting sauce or gravy conceals its bitter flavour. Maybe that’s why this dish totally works for me, lol. Try it!

Stewed Pork Chops with Bitter Gourd Recipe

Ingredients (serves 2-3)
1 can stewed pork chops approx. 397g (I use Narcissus brand)
200g bitter gourd, thinly sliced
2 cloves garlic, finely chopped
200ml water
1/2 tbsp light soy sauce
1/2 tbsp olive oil

Instructions
1. Heat a little oil in pan and saute garlic till fragrant.
2. Add bitter gourd slices and briefly pan-fry.
3. Add the entire can of stewed pork chops with its gravy and break up the meat into small bits using the spatula.
4. Add water and bring to a boil. Reduce heat to simmer till sauce reduces slightly and bitter gourd is tender. Adjust taste with light soy sauce if need be.
