Stir Fried Beef with Spring Onions & Ginger Recipe

Using spring onions in a wok stir fry is an excellent way to impart this extra fragrance, sweetness and delicate flavour to any meat or seafood, be it fish slices, chicken, beef or even frog legs. And with the use of ginger slices, any possible fishy or gamey smell is just reduced to none. My mother-in-law makes a really good stir fried beef with spring onions & ginger so it’s one of my husband’s favourite dishes. Salty and savoury, it goes really well with steamed rice. Enjoy!

Beef with Spring Onions & Ginger Recipe

Ingredients (serves 2)
150g beef chuck, thinly sliced
1 yellow onion, sliced
3 stalks spring onion, cut into 1″ sections
4 slices ginger
2 garlic cloves, thinly sliced
vegetable oil

Marinate: (combine with beef and chill in fridge for at least an hour)
1 tbsp oyster sauce
1/2 tbsp light soy sauce
1/2 tsp sugar
1 tbsp chinese cooking wine
1 tsp corn starch

Instructions
1. Heat a little oil in wok and stir fry beef 1-2 minutes on high heat till meat is no longer pink. Remove and set aside.
2. In the same wok, saute onions till soft. Add spring onions, ginger and garlic. Stir fry till fragrant.
3. Add beef and stir fry quickly till well combined.
