Teriyaki Salmon Pizza Recipe

I had shared my love for thin-crusted pizzas in my earlier tortilla pizza recipe post. And this time I thought I would try something different by using chapati as my pizza base. Ok I must admit, I’m so into the chapati these days that it’s probably going to replace my regular tortilla ultimately, lol.

I had also bought some nutritional yeast from an organic health food store when a vegan friend recommended it as a substitute for cheese. Supposed to be healthy so why not. Nutritional yeast is not the same yeast that’s used in bread-making. It’s a kind of deactivated yeast that’s yellowish in colour and somewhat tastes nutty and cheesy. While I’m not really used to its flavour (still prefer the real deal), I do appreciate it as a healthy replacement for cheese as it’s very low in fat and sodium. But if you think you’re not into such kind of health food, feel free to omit it from this recipe. This pizza that I’m featuring today tastes good on its own as it has a teriyaki sauce for flavour so adding cheese (whether real or fake) is not necessary. Enjoy! 🙂

Teriyaki Salmon Pizza Recipe

Teriyaki Salmon Pizza Recipe

Ingredients (serves 2)
1 piece skinless salmon fillet approx. 250-300g
2 pieces frozen chapati
8 cherry tomatoes, halved
1/2 head medium-sized broccoli, cut into florets & lightly blanched in boiling water
2 tsp nutritional yeast (optional)

Sauce: (combine in a bowl)
1 tbsp sugar
1 tbsp mirin
1 tbsp sake or Chinese cooking wine
2 tbsp Japanese light soy sauce

Instructions
1. Preheat oven at 170 deg C with fan. Line a baking tray with aluminium foil and lightly grease with cooking spray.
2. Transfer the salmon fillet onto the baking tray and bake for 8-10 minutes till salmon is cooked through. Leave the oven on same temperature for further baking later.
3. In a pan, bring the sauce to a boil and turn off the heat. Add the cooked salmon fillet into the sauce and use a spatula to flake the fillet into small chunks of meat. Stir thoroughly to combine with the sauce.
4. Heat up a skillet with no oil and grill a frozen chapati lightly on both sides (flipping regularly) till the chapati thaws and dries up. Repeat for the other chapati.
5. To assemble the pizza, first place the chapati on a baking tray lined with parchment paper or on a non-stick crisper pan if you have one. Arrange the salmon on the chapati followed by the tomatoes and broccoli.
6. Pop the pizzas into the oven for a few minutes till the chapati crisps up and then sprinkle nutritional yeast (if using) on top before serving.
