The Big Easy – Chow on classic Cajun cuisine

The hubby booked a staycation trip at Resorts World Sentosa recently to celebrate my birthday and also gave me a lunch treat at The Big Easy which claimed to be Singapore’s “premier New Orleans themed Bar and Restaurant”.

Cosy and welcoming environment. Just like how I remember family restaurants were like when I studied in America years ago.
Louisiana Wings ($14.88)
The sauce is definitely an acquired taste. When you first set your tongue on this tangy sauce, the first reaction that follows will be, “This sauce is damn sour” and then it leaves this soury, slightly spicy after-taste on your tongue throughout the meal. The funny thing is, the more you eat, you more you enjoy the sauce. I end up dipping almost everything else in the Louisiana hot sauce. The wings are supposed to be deep fried but I couldn’t taste the crispiness at all. But I guess anything goes well with the sauce.

Pulled Pork Po-Boy Sandwich ($17.88)
Slow roasted pork pulled off the bone, served with their homemade ravigote dressing. Baguette bread is used instead and definitely tastes better than normal sandwich buns. The bread is crispy on the outside and soft on the inside. It is an excellent accompaniment to the pulled pork filling. The sandwich is huge and thick, filled with a generous portion of pork meat and lettuce. The dressing is slightly on the bland side but perfect for me. I thoroughly enjoyed the sandwich. The cajun fries are just as addictive. Nicely fried.
New Orleans Chicken Burger ($17.88)
Cajun chicken breast, char grilled with Louisiana hot sauce. The buns are normal but the chicken breasts are so good. I normally won’t go for chicken breast meat but these are nicely marinated and grilled and full of juices and flavours. The corn cob is a bit crappy though, not sweet at all.

Overall, a lovely meal. Probably because I’ve always enjoyed Cajun cuisine anyway. The service staff needs more training though. One waitress served us the chicken wings without a smile and a word. No cutlery was given until we asked for it. No side plates too even though we said we were sharing (wings were served in a basket). Certainly needs some improvement here.
