Tofu Scramble with Figs & Nuts Recipe

I flipped through a cooking magazine at the library a while ago and saw an interesting recipe of scrambled tofu with pistachios & cranberries so I thought of coming up with my own version with figs, cashews, chickpeas and raisins. I love figs. They are a really healthy treat to snack on. Figs help to lower high blood pressure, are a good source of dietary fibre & calcium and has an insulin-lowering effect on diabetics. This is pretty much a healthy and nutritious vegan dish that’s low in fat.

Tofu Scramble with Figs & Nuts Recipe

Ingredients (serves 2-3)
400g firm tofu (tau kwa), crumbled
3 stalks leeks, sliced diagonally
1/2 cup of dried figs, cashews, chickpeas & raisins (mix)
1 tsp garam masala
1 tbsp fish sauce

Instructions
1. Heat a little oil in pan and stir fry leeks till slightly softened.
2. Add tofu and season with fish sauce and garam masala. Using a spatula, mash up the tofu as you stir fry it.
3. Remove from heat and stir in the fig and nuts mix.

Garam (‘hot’) masala (‘mixture of spices’) is a combination of different ground spices normally used in Indian or South Asian cooking. It gives the dish an exotic flavour and aroma so this dish doesn’t taste too flat. Be careful not to use too much garam masala, or else the overpowering flavour will just spoil the dish. Add a little at a time and taste till you think it’s about right because it’s quite an unusual acquired taste. Enjoy!
