Curried Chicken Waldorf Salad Recipe

I was pretty intrigued by the name Waldorf Salad previously because I had always thought the salad was named after someone’s last name. Well, according to Wikipedia, the name of the salad came about when it was first created for a charity event that was held at the Waldorf-Astoria Hotel in New York City in 1896.

The original dish was made with just apples, celery and mayonnaise unlike today’s version. Seemed like a really simple and unassuming dish, yet it was one of the signatures that was ever created. Now, it’s pretty much a heritage recipe.  😉

Hmm, it’s kinda pointless to share a recipe that just combines apples, celery and mayonnaise. 😀 You can probably find countless (classic) recipes on that – just search on Google.

I want something more. Something different.

A Different Waldorf Salad

Give the dressing a hint of spice with the addition of aromatic curry powder. Make it healthier by substituting most of the mayonnaise with Greek yogurt. Bulk it up with some brown & red rice that are low in GI and can enhance satiety. Everything just comes together perfectly. 😉

This Curried Chicken Waldorf Salad is pretty much a meal on its own. You can make it a day in advance and pack it for next day’s lunch as it tastes just as good when chilled.

Curried Chicken Waldorf Salad Recipe

  • 300g cooked chicken breast meat, diced
  • 1 1/2 cups cooked brown & red rice
  • 3 stalks celery, chopped
  • 1 apple, diced
  • 50g coarsely chopped walnuts
  • 50g golden raisins
  • 3 sprigs parsley, chopped
  • 200g light Greek yogurt
  • 3 tbsp light mayonnaise
  • 1 1/2 tbsp curry powder
In a bowl, whisk together the yogurt, mayonnaise and curry powder till smooth.
Add the chicken, brown & red rice, celery, apple, walnuts, raisins and parsley.
Toss to mix well.
Serve chilled or at room temperature.
