Whole Wheat Chocolate Chip Scones Recipe

Time for whole wheat baking again! I’ve been doing it a lot recently because I’ve a huge bag of whole wheat flour to use up and I really don’t want to waste it.

My first time making whole wheat scones. (If you don’t have or don’t like whole wheat flour, then replace entirely with all-purpose plain flour.) I thought they tasted pretty good especially after I added a chocolate glaze on top – that brought decadence to the max, haha. And they also had this light fragrance of soy because I added soy milk in the dough as well as the glaze. Soy and chocolate, not a bad pairing, really.

As the chocolate chips and glaze were sweet enough, there wasn’t a need to add too much sugar. Trying my best to keep home baking as healthy as possible. ๐Ÿ˜‰

I like my scones moist and crumbly so instead of baking the scones separately after slicing the dough up into wedges, I kept the wedges in the circle and baked as is so as not to expose the sides to too much heat. But if you like a crispier exterior, then bake the wedges apart.

Whole Wheat Chocolate Chip Scones Recipe

Ingredients (makes 12 pieces)
300g whole wheat flour
1 tbsp baking powder
1/2 tsp sea salt
90g cold unsalted butter, cut into cubes
75g light brown sugar
120g chocolate chips
180ml unsweetened soy milk
1 egg, beaten

For the chocolate glaze:
1/2 cup icing sugar
2 tbsp cocoa powder
2 tbsp unsweetened soy milk

Instructions
1. Preheat oven to 180 deg C with fan. Line a baking tray with parchment paper.
2. In a large bowl, mix together the flour, baking powder and salt. Add the butter and rub it with the flour mixture till it resembles breadcrumbs.
3. Mix in the sugar and chocolate chips and stir in the milk and egg till you get a dough of clay-like texture.

4. Turn the dough onto a lightly floured surface and roll it out into a 8.5″ circle of about 1/2 inch thickness. Slice the dough into 12 wedges and transfer onto the baking tray.
5. Bake for 20 minutes till golden brown. Remove the scones from the baking tray and place onto a wire rack to cool.
6. In a mixing bowl, whisk together the ingredients for the chocolate glaze. Drizzle the glaze over the scones and serve.
