Yan Ting – Cantonese Fine Dining @ St Regis

Our boss suggested to do a post-event celebration & company lunch and we decided to have Cantonese Chinese food @ Yan Ting, St Regis. When we arrived, before I could say my name for the restaurant staff to check against their reservation list, he read out my name almost instantly and ushered us to a private room where one service staff was assigned to us at our disposal.
The Menu
The room setting was very good and very clean. Overall, it looked and felt posh. The service was excellent. In fact, I was very impressed with the service staff who spoke fluent English, Mandarin and Cantonese. Staff all seemed very well trained, definitely a plus point.
Assorted dim sum
I had long heard about the award-winning Yan Ting for its quality dim sum. We weren’t disappointed at all. We ordered the Steamed Prawn and Scallop Dumpling, Steamed Prawn Dumpling (Ha Kow), Steamed Siew Mai, Xiao Long Bao, Steamed Beancurd Roll and Char Siew Bun. The prawns and scallop were fresh and crunchy. The chef must have controlled the cooking time very well as the seafood did not taste overcooked at all. The Xiao Long Bao was extremely juicy. I could even ‘pour’ soup out of it onto my spoon. Very very sweet and good. The Char Siew Bun was a bit too soft to my liking though. The buns were more like the colourful steamed rice cakes (locals call them a-ge-ge) but the char siew meat were lean and didn’t taste too sweet which was not too bad.

Next, we had broccoli with crab meat, deep fried prawns with mango, Peking Duck (I was so engrossed with eating it that I forgot to take a picture), stir fry duck meat wrapped with lettuce and fried rice with salted fish. The prawn was probably the best dish because it was deep fried to perfection, so crispy that you could just eat the entire prawn head which I did and even had a second piece! The mango bits gave it a sweet and sour taste which made the ‘oiliness’ much more acceptable. The fried rice was not bad too. At least I could taste the salted fish bits which gave the rice a very nice fragrance. The rice was not soggy or too dry so it was perfect.
Mango & pomelo soup

Just like its name, it’s quite watery, different from its other thicker-gravy cousins of the same name. The mango taste was strong and fragrant. I don’t dislike it but if there could be more mango bits and pomelo (i.e. more substance), I believe it’d be a very popular dessert here.

    I'm waiting for when we go so we can try everything off this menu! Judging by pictures and rating, it must be one of the best Chinese restaurants in Singapore?
