KFC Style Fried Chicken Recipe

I remembered coming across a copycat KFC fried chicken recipe while flipping through a recipe book at the library a while back. And sometime last year, I was watching this food programme on TV that gave an insight on how KFC made their O.R. chicken. There wasn’t any overnight marination and they merely dunked the chicken parts in brine before tossing them in seasoned flour that contains 11 secret ingredients.

If you just do a search on Google, you will notice there are tons of different KFC-inspired fried chicken recipes and every recipe’s use of spices is somewhat different. I guess at the end of the day, it’s just about the mix and match or trial and error, to get that taste of fried chicken that you and your family will enjoy. So this was how I experimented with mine and I had been loyally sticking to this recipe whenever I want to fry up some chicken. Also, I swear by buttermilk (not brine, lol) as it really makes chicken so much more moist, juicy and delicious. It’s not 100% KFC style but the husband thinks it’s pretty close if not better. 😉  Give it a try!

KFC Style Fried Chicken Recipe

Ingredients (serves 4)
8 pieces chicken of your preferred part approx.
400ml buttermilk
2 cups all-purpose plain flour
2 tbsp sea salt
2 tbsp freshly ground black pepper
2 tbsp ground paprika
1 tbsp garlic powder
1 tbsp dried basil
1 tbsp dried oregano
1 tbsp freshly grated nutmeg
canola or sunflower oil for frying

Instructions
1. Combine chicken and buttermilk in a ziploc bag. Chill in fridge overnight.
2. Combine the rest of the dry ingredients in a separate ziploc bag and give it a good toss.
3. Shake off excess buttermilk from each piece of chicken and transfer into the ziploc bag with flour.
4. Shake thoroughly to ensure every piece of chicken is coated with the flour mixture.
5. Heat oil in skillet pan to 175-180 deg C.
6. Shallow fry the chicken in 2 batches (4 pieces at a time) for about 8 minutes per side till golden brown and crispy.
7. Drain the chicken on paper towels to absorb excess grease. Serve with your preferred sides.
