I enjoy making meat patties, be it chicken or pork, as the options of accompaniments are vast but some popular ones would of course include water chestnuts, french beans, long beans, carrots, corn, lotus root, celery, rhubarb and other similar vegetables that could give the patties a good crunch. For this Corn & Chicken Patties Recipe, I would suggest to use fresh sweet corn instead of frozen corn kernels as the latter could be quite dry and tasteless and wouldn’t add much value to the patties.
Corn & Chicken Patties Recipe
Ingredients (serves 4)
300g minced chicken
fresh corn kernels from 1 corn cob
1 medium size red onion, diced
4 french beans, diced
3/4 cup panko breadcrumbs
1/2 tsp salt
1/2 tsp sesame oil
few dashes of white pepper
2 tbsp corn flour
1 tbsp olive oil
1. Mix all ingredients in a bowl. Set aside for 15 minutes.
2. Heat some oil in a skillet. Drop one tablespoonful of meat mixture onto skillet and press down gently with a spatula. Repeat with the rest of the mixture.
3. Pan-fry till both sides are golden brown.
Have some sweet chilli sauce on standby. Great for dipping these patties in! Enjoy!
