Home-made pizza sauce and tortilla pizza recipes

I have always preferred thin-crusted pizzas (like Spizza’s) to classic hand-tossed thicker ones as the crunch of the crispy crust gives the pizza an inviting texture without filling me up so I can enjoy more varieties of different flavours.

At home, the husband and I eat tortilla wraps regularly so they will always be in my pantry. This time round, I decided to turn them around into something different for a change, well, partly because I was just too lazy to make my own pizza dough and I didn’t want to use a frozen one from the supermarket, lol. Good thing is, these wraps make instant fixes that save me a lot of time and hassle and they taste really good as pizza bases too!

Pepperoni Wholemeal Pizza

Pizza Sauce Recipe

Ingredients (yields 1 cup)
2 large tomatoes (approx. 350g), finely diced
80g tomato puree
2 cloves garlic, minced
handful of fresh parsley, finely chopped
1 tsp dried basil
salt & freshly cracked black pepper
olive oil

Instructions
1. Heat a little olive oil in pan and saute the garlic till fragrant.
2. Add the tomatoes and tomato puree. Stir to combine and let the mixture cook for 5 minutes on medium-low heat.
3. Add parsley & basil and simmer for another 2 minutes.
4. Season with salt and pepper.


Tortilla Pizza Recipe

Ingredients (makes 6-8 pizzas)
6-8 wholemeal tortilla wraps
250g cheddar cheese, shredded
200g button mushrooms, sliced
250g pepperoni salami, sliced
200g minced beef
1 large onion, finely diced
olive oil
salt & freshly cracked black pepper

Instructions
1. Preheat oven to 180 deg C with fan.
2. Heat a little olive oil in pan and saute the onions till tender. Add in the minced beef and cook till meat is no longer pink. Season with salt and pepper. Remove and set aside.
3. In the same pan, add the button mushrooms and saute till tender. Season with salt and pepper. Remove and set aside.
4. Spread the pizza sauce over each tortilla wrap. Arrange the minced beef mixture and mushrooms or pepperoni slices over each wrap and top with cheddar cheese.
5. Transfer the pizza onto a non-stick pizza crisper pan and bake for 10 minutes till cheese has melted and crust is crispy. Repeat with the rest of the wraps.

And this was the minced beef version whose taste reminded me of beef nachos, lol. Delightfully delish! Crunchy, crispy and cheesy – all my 3 essential Cs of a good pizza. Yum. Want a slice?
