Created another new recipe in the kitchen today when I was looking through some of my older recipes and thought I’d make a non-carb version of this Spicy Lemon Garlic Chicken Spaghetti. Off went the pasta and I used a whole pack of crunchy sugar snap peas which I loved. Somehow I just thought garlic, chilli flakes and lemon worked really well together. Citrusy, punchy, spicy flavours – all we need to tingle those taste buds and whet up an appetite.
Oven Baked Chicken with Sugar Snap Peas Recipe
Ingredients (serves 1-2)
2 chicken drumsticks, skin removed
150g sugar snap peas
1/2 tbsp lemon juice
1/2 tsp dried chilli flakes (more if you like it spicy)
2 cloves garlic, finely chopped
salt & freshly cracked black pepper
1. Preheat oven to 180 deg C with fan.
2. Place the chicken drumsticks in an oven dish, drizzle olive oil over and season with salt and pepper.
3. Bake the chicken for 20 minutes and remove the oven dish. Drizzle the lemon juice over the chicken and sprinkle the chilli flakes and chopped garlic on top.
4. Add the sugar snap peas around the chicken and place the dish back into the oven for another 5 minutes till the snap peas are cooked.
