Watercress Pork Ribs Soup Recipe

The husband said he would like to have watercress soup for dinner and I cringed because it was a soup that I disliked since I was little. Even when Gran used to make it a lot at home last time because it is supposedly nutritious and cooling for the body, I would only eat the pork ribs but leave the watercress and soup aside because there was just a taste in the soup that I didn’t appreciate. Despite that, I decided to try making the soup with goji and red dates to give it a sweeter flavour, while hoping I might like it since my taste buds would have probably changed over the years.

Watercress Pork Ribs Soup

Ingredients (serves 3-4)
400g pork ribs, blanched in boiling water to remove scum
300g watercress
1/2 bulb garlic, place in soup pouch
a small handful of dried seedless red dates
1 heaped tbsp goji (dried wolfberries)
water
salt to taste

Instructions
1. Add all ingredients except goji berries into soup pot and fill with enough water to cover the ingredients.
2. Bring to a boil. Reduce heat and simmer for 40 minutes till pork is tender. Remove soup pouch, add the goji berries and simmer for another 10 minutes.
3. Season with a little salt if required.

The goji and red dates did sweeten the soup so that flavour of watercress is not so overpowering for me. While I didn’t hate the soup as much as last time, I didn’t like it that much either so I told the husband this was only a one-off attempt just for him. Give me lotus root soup please!
