Tropical Chicken Salad Recipe

Being in this part of the world where we get an all-year-round supply of beautiful tropical fruits – we are just spoilt for choice. It is so easy to make a fruit salad anytime we want but I prefer to do something different.

A cross between a fruit salad and a savoury salad that has sweetness, saltiness, spiciness, tanginess, herbiness, juiciness, crunchiness (the list goes on, lol) in it. Yes, all that good-NESS 🙂 A protein is also included so this salad can be a meal on its own. Ideal for dinner parties as you can make a big bowl of it the night before and chill it for next day which also gives time for flavours to marry 😉 Enjoy!

Tropical Chicken Salad Recipe

Ingredients (serves 4-6)
300g cooked skinless chicken breast, cut into cubes
1/2 pineapple, cut into cubes
1/4 papaya, cut into cubes
handful of coriander leaves, chopped
handful of mint leaves, chopped
zest of 3 calamansi limes
2 tbsp white sesame seeds, toasted
2 red chillies, seeded & sliced

Dressing:
1 tbsp fish sauce
juice from 3 calamansi limes
1/2 tsp sesame oil
2 tbsp extra virgin olive oil
1 tbsp grated palm sugar

Instructions
Toss all ingredients together in a mixing bowl and chill in fridge for flavours to marry before serving.
