Baked Salmon Parcel Recipe – Quick, Easy & Tasty

Let’s cook something really really easy today, shall we? 😉 This Baked Salmon Parcel is really convenient to prepare, whether it’s for one person or for the whole family. And the best thing I like about this recipe is, clean-up is absolutely minimal. 😀

May not be the prettiest looking dish (haha!) but it’s totally homely, healthy and wholesome.

Choose The Best Fresh Salmon

For this dish, I highly recommend that you use fresh salmon instead of those frozen ones as I always find the latter too fishy for steaming or poaching. And go for the mid-body fillets (better still, belly cuts) instead of tail fillets as they contain more fats i.e. omega-3.

To make the parcels, you will need parchment paper and aluminium foil so have them ready in approximately 30cm x 30cm squares.

For the vegetables, I had an assortment of carrot, broccoli, yellow onions and peas. You can always swap them with other vegetables like cauliflower, okra, asparagus, etc. Can also add mushrooms if you like a little more variety.

This Salmon Parcel is not heavy-handed with seasonings so all we need are just lemon juice, salt and pepper. This way, we can keep everything clean and fresh-tasting. Absolutely healthy and delicious. 😉

Baked Salmon Parcel Recipe

  • 2 salmon fillets
  • 1 carrot, sliced
  • 1 small broccoli, cut into florets
  • handful frozen peas
  • 1 yellow onion, peeled & sliced
  • 1 lemon, halved
  • 2 tsp olive oil
  • sea salt & freshly ground black pepper
Preheat oven to 190 deg C.
Prepare 2 sheets of aluminium foil and 2 sheets of parchment paper of approx. 30cm x 30cm.
Place each sheet of parchment paper on top of each sheet of foil.
Rub 1 tsp of olive oil in the middle of each parchment paper and place the salmon fillet on top.
Arrange half of the vegetables around each salmon fillet.
Squeeze one half of the lemon over each salmon fillet and season with salt and pepper.
Wrap each salmon fillet into a parcel while keeping the top somewhat loose.
Transfer the parcels onto a baking tray and bake in the middle of the oven for 15 minutes.
Unwrap the parcels (be careful, it’s steaming hot!) and enjoy.
