Keto Buffalo Wings without coating

Woohoo! It’s buffalo wings time again! As mentioned in my previous post, here’s my recipe for version 2 of Keto Buffalo Wings without coating. That’s right, it just means the wings are oven-baked naked this time without any addition of flour.

Personally I would prefer version 1 (Keto Buffalo Wings with coating) which comes with an almond flour coating and is closer to the real thing. However, I must say this particular recipe is way lower in carbs and calories so for those of you watching your weight or are on a low carb diet, this is definitely a better option.

Meal prep simplified

As this version of buffalo wings doesn’t have coating, prep work is just simplified. There’s no need to air dry the wings in the fridge or toss the wings in a dry mixture in a ziplock bag. If you’re using frozen chicken wings, thaw them completely and give them a quick rinse under running water. Then use a few sheets of paper towels to pat the surface dry. Do the same for fresh chicken wings. Once done, you can toss the wings in oil and seasonings as per my recipe.

Chicken wings are the best parts but you can use whatever you like

Instead of whole chicken wings, I had used drumettes as they were what I had in the freezer. Of course you can still use whole wings or even mid-joint wings – whatever you prefer. I tried with all three types and I thought mid-joint wings tasted the best. Just make sure when you’re oven baking them, they are spread out in one single layer on the baking tray so they can be evenly cooked and browned. Or if you have an air-fryer, you can use that too.

I served these buffalo wings with celery sticks, red bell peppers and ranch dressing. OMG! Absolutely delicious!!?

4 (5 drumettes each)
  • 20pcs chicken drumettes approx. 1kg in weight, rinsed & patted dry
  • 2 tbsp avocado or olive oil
  • 1 tsp sea salt
  • 2 tsp each of garlic powder, onion powder & paprika
  • 150ml hot sauce
Preheat oven to 180 deg C with fan mode on.
Line a baking tray with aluminium foil or parchment paper.
In a large bowl, toss the drumettes thoroughly with avocado oil, garlic powder, onion powder, paprika and salt.
Transfer the drumettes onto the baking tray in one single layer.
Bake for 20-25 minutes or till the wings turn golden brown.
Toss the cooked drumettes in hot sauce.
Serve with vegetable sticks or your preferred sides.
