Mincheng Bibimbap 敏丁拌饭 wasn’t on my radar until a recent lunch hunt led us straight to their AMK Hub outlet. What started as a casual meal turned into one of the better Korean dining experiences I’ve had in Singapore.

Our First Mincheng Bibimbap Experience
We stumbled upon the AMK Hub outlet whilst looking for lunch after visiting my folks. Perfect timing – we were first in queue just as they were about to open for lunch. Within minutes, a long queue formed behind us.
One auntie walking past asked if the food was any good. I had to admit it was my first time, which got her chuckling because she couldn’t believe so many people were queuing for something none of us had tried. That’s Singapore for you!
The Menu: More Than Just Bibimbap
As their name suggests, Mincheng Bibimbap specialises in bibimbap variations featuring beef, pork, chicken, or even tuna. Beyond their signature dish, they offer a decent selection of Korean dishes including spicy squid, hot pot chicken, hot plate pollock fish, kimchi soup, and more.
Here’s what sets the dining experience apart – unlimited refills of rice, kimchi, and seaweed soup for dine-in customers. I’m not much of a rice person but it works perfectly for my hubby who eats a lot of rice every meal.
The seaweed soup proved rather bland and lacking in flavour depth, so I didn’t return for seconds. However, the kimchi was excellent – perfectly balanced without excessive sourness or heat. Genuinely appetising and well-prepared.
What We Ordered
BBQ Bibimbap (Beef) – $8.80
The presentation was impressive – ingredients neatly arranged on top like a proper Korean bibimbap should be. You grab the squeeze bottle of sauce from every table, drizzle it on, and mix everything up before digging in.
I’m not exaggerating when I say this might be one of the best bibimbaps I’ve had in Singapore. The sauce was delicious, and the textures of vegetables, meat, and rice complemented each other brilliantly. Fragrant, comforting, hearty – everything you want from a good bibimbap.
Hot Plate Pork Belly with Sauerkraut – $10.80
When this arrived at our table, the aroma of sauerkraut struck us immediately. The portion size was generous – loads of meat in this dish. The sauerkraut (pickled cabbage) paired beautifully with the pork belly. Its sour, salty profile effectively cuts through the greasiness.
This dish really makes you crave rice. No wonder my husband polished off three bowls!
Hot Plate Egg with Tofu – $8.80
This arrived last, sizzling away on the hot plate. The eggs looked perfectly cooked with runny yolks, but here’s where things went sideways. Because it was so steaming hot, we couldn’t eat it immediately. By the time we could, the bottom was completely burnt – black charred bits everywhere.
I get what they were going for – that crispy caramelised bottom like you’d get with claypot rice. But this was so burnt it was bitter and inedible. Plus, the dish isn’t anything special anyway. Literally just eggs and silken tofu with some sauce that didn’t quite bring everything together. The sauce was spicy but lacked depth.
My Verdict
The prices are reasonable, especially considering the free refills of rice, seaweed soup, and kimchi. Perfect for people with hearty appetites who want to fill up without breaking the bank.
The bibimbap genuinely impressed me – it’s authentic, flavourful, and satisfying.
Would we return? Absolutely, but we’d stick to what they do best. The bibimbap and sauerkraut pork belly are definitely worth coming back for. We’ll give the hot plate eggs with tofu a miss next time.
