Stir Fried Lotus Root Recipe (with French Beans and Fish Cake)

Every time I boil lotus root soup at home, I’d end up with extra lotus root in the fridge because I can never find a small root just nice for 2 persons’ serving so this time I thought of slicing the lotus root up to make a really easy vegetable stir fry with french beans and fish cake. This Stir Fried Lotus Root Recipe makes a good low calorie, no carb meal on its own. All we need is just a tiny dollop of oyster sauce and/or dash of fish sauce for flavour.

Stir Fried Lotus Root Recipe

Ingredients (serves 2)
250g french beans, cut into 1″ sections
200g lotus root, thinly sliced
100g fish cake, thinly sliced
1 tbsp oyster sauce
2 tbsp water
1 tsp fish sauce
2 cloves garlic, minced
vegetable oil

Instructions
1. Heat a little vegetable oil in pan and saute the garlic till fragrant.
2. Add lotus root, french beans, water, oyster sauce and fish sauce and stir fry till the french beans are tender.
3. Add fish cake and stir fry to combine.
