Tandoori Chicken Pizza Recipe

Earlier I had shared a Tandoori Chicken Recipe. That meal was deliciously gratifying but there was too much chicken for the two of us. Therefore we kept aside a portion of chicken meat (hand-shredded from the bones) just so we could make another meal with it. Like this Tandoori Chicken Pizza, which is so easy to assemble. Totally fuss free meal yet super satisfying. 😀

I often buy this brand of wraps from the groceries section at Mustafa Centre. Not sure if it’s sold in other places as I haven’t seen it anywhere else. It costs $3.90 for a packet of 8 wraps. Reasons why I like these wraps are that they are very affordable and they come in various interesting flavours like chia, rye, oat, quinoa, spelt, oregano, barley, etc which we don’t see elsewhere. Most, if not all, contain no dairy product, yeast and eggs. They are almost completely fat free, are not oily and are lower in calories. For example, one rye wrap has only 69 calories. 😀

Wraps As Pizza Base

With just one pack of chia wraps, I could make 4 pizzas, each measuring approximately 25cm x 35cm. Slightly overlapped two wraps (to fit within the length of my baking tray) to make one pizza base. Surprisingly, one pizza like this is quite substantial and filling.

No Less Delicious Than Regular Pizzas

I added red and green chilli peppers for colour contrast and topped the pizzas with rocket leaves which complemented the tandoori chicken and cheese flavours perfectly. As the wraps are very thin, they come out really crispy and crunchy after being baked in the oven. These are as delicious as classic pizzas but without the heaviness of bready dough. Ideal if you’re after low carb meals. 😉

Tandoori Chicken Pizza Recipe

  • 1 cup Tandoori Chicken meat, hand-shredded
  • 8 chia wraps
  • 1 red onion, peeled & sliced
  • 1 red & 1 green bell pepper, sliced
  • 4 tbsp tomato paste
  • 125g cheddar cheese, shredded
  • handful of rocket leaves
Preheat oven to 180 deg C. Line a baking tray with aluminium foil.
Roughly divide the ingredients into 4 portions.
Place two wraps on the baking tray, with one wrap overlapping the other by an inch in the middle.
With a pastry brush, spread 1 tbsp of tomato paste all over the pizza base.
Arrange one portion of the chicken meat, onions and bell peppers on top and scatter one portion of cheese over.
Bake in the oven for about 5-7 minutes till the base crisps up and the cheese has melted.
Repeat the above steps with the rest of the ingredients
