Time to spice things up in the kitchen with this uber-shiok Spicy Yogurt Chicken Recipe! 😉 I drew inspiration from a spicy pasta dish I made the night before and the husband was telling me to buy more of those dried hot chilli flakes that would make our tongues tingle. So while I was looking through my past recipes for chicken dishes, I thought I would reinvent my Tandoori Chicken Recipe into something more spicy and mighty 🙂 Under the ingredients list, I only mentioned a modest amount of chilli flakes used (1 teaspoon) but I was happily sprinkling more of them over the chicken before baking and even after too so I estimated a tablespoonful actually went into the dish. Anyway it’s really up to you to decide how much spice you want in there depending on your spice tolerance level.
Just a word of caution – do be careful when you’re handling turmeric powder because it is very difficult (and almost impossible) to remove turmeric stains from clothes. There was a time I forgot my apron when I had a turmeric disaster and one of my favourite home tops was a goner 🙁 Don’t take chances!
Oven Baked Spicy Yogurt Chicken Recipe
Ingredients (serves 2-3)
8 chicken drumlets
1/2 cup Greek yogurt
1/2 tbsp ground cumin
1/2 tbsp ground coriander
1 tsp garlic powder
1 tsp curry powder
1 tsp turmeric powder
1 tsp dried chilli flakes + extra for sprinkling
pinch of sea salt
Instructions
1. Combine all ingredients in a large mixing bowl. Cover with cling-wrap and chill in fridge for at least 2 hours or overnight for best results.
2. Preheat oven to 180 deg C with fan. Line a baking tray with aluminium foil and lightly grease with cooking spray.
3. Transfer the chicken drumlets onto the baking tray in one single layer, insert into the middle shelf of the oven and bake for 20 minutes till cooked through.
4. Sprinkle more chilli flakes over the chicken (if preferred) before serving.
