When we have Teochew porridge outside, it’s quite common to find minced pork patties with tung choy (or 冬菜) which is a kind of preserved vegetable or salted fish. While these pork patties can be really delicious, they are also extremely salty. I don’t encourage frequent consumption of preserved food stuffs so that gives me an idea to create a similar dish that’s more healthy with fresh ingredients and that is by using the naturally sweet and tangy tomato.
Steamed Minced Pork Recipe
Ingredients (serves 2-3)
250g fresh ground pork
1 tsp sesame oil
1/2 tbsp light soy sauce
dash of ground white pepper
2 tbsp chicken broth
1 tomato, sliced
chopped spring onions as garnish
1. Combine ground pork with sesame oil and season with soy sauce and pepper.
2. Spread the meat mixture onto a steaming dish to form a patty shape and then arrange the tomato slices on top. Spoon the chicken broth over the tomatoes.
3. Steam at high heat for about 20 minutes till meat is cooked through and tomato slices are soft.
4. Garnish with spring onions and serve while hot.
