Kewpie Sesame Soy Sauce Dressing

I first came across this new Kewpie product when I was doing grocery shopping at Fairprice sometime last year. It was retailing at about S$5.80 per 210ml bottle. Bought one bottle, tried it and just loved that savoury & nutty flavour that made salads taste really yummy. Couple of months later, I was shopping at Tesco Tebrau City in JB and saw the same dressing going at RM7.70 which was only S$2.90 (half price!). I swept a dozen back together with this other new flavour, Roasted Sesame Japanese Dressing (RM8.80) that I couldn’t find in Singapore. What a steal!

With the Kewpie Sesame Soy Sauce Dressing, I came up with this mega salad (it’s mega because it has so many ingredients in it, lol) that was full of colours and textures. It was a myriad of different flavours – sweetness from the lychees, spices from the prawns, etc. I made such a big portion that there was enough leftovers to keep for lunch the next day and it tasted even better after the flavours married overnight in a chilled form. Soba Noodle Salad Recipe

Ingredients (serves 4-5)
200g soba noodles, cooked according to packet instructions
1 carrot, sliced into thin strips (with a peeler)
1 cucumber, seeds removed & sliced thinly
1 tin of lychee in syrup, rinsed & drained
1 tin of chickpeas, rinsed & drained
corn kernels from 2 steamed corn cobs
1 cup edamame beans
200g cherry tomatoes, halved
Kewpie Sesame Soy Sauce Dressing

Topping:
20-30 spiced prawns* (see side recipe below)
2 hard-boiled eggs, coarsely chopped up
1 large sheet of dried seaweed, sliced
sunflower seeds

*For the prawns, marinate with:
1/2 tsp cayenne pepper
1 tsp garlic powder
1 tsp ground cumin
1 tsp paprika
1 tsp coriander
and then lightly stir fry in olive oil till they turn opaque.

To assemble the salad:
1. Combine all ingredients (except egg, prawns, sunflower seeds and seaweed) in a large mixing bowl with 1/2 bottle (approx. 120ml) of Kewpie Sesame Soy Sauce Dressing (or as much as you want).
2. Toss thoroughly and transfer onto serving plates. Top with prawns, egg and seaweed followed by a sprinkle of sunflower seeds.
